*Ingredients:
°1.8 kg of apples peeled, cored and cut into pieces (I did half Gala and half Granny smith)
°300 g raw cider
°40 g organic cider vinegar
°150 g maple syrup (or failing that, brown orchard)
°1 tablespoon cinnamon powder
°1 cinnamon stick
°1 pinch grated nutmeg
°1 vanilla bean or 1 tbsp natural vanilla extract
°3 cloves
°1 pinch salt
*Preparation
In a medium saucepan, pour the cider and cider vinegar. Add the spices and maple syrup and prepare the apples.
Wash, peel and seed the apples. Cut into pieces. Put the apples in the pan and cook over low heat, covered, stirring regularly.
Once the apples are well candied, when there is almost no liquid left in the bottom of the pan (it takes more or less time depending on the size of your apple pieces and your fire but at me it took 1h30), extinguish the fire and remove the whole spices (vanilla bean, cinnamon stick and cloves). Let
Place the apples in the blender bowl and mix until you get a smooth apple butter.
Pour the apple butter into a sterilized jar, close it, then keep it in the fridge or freeze it for later.
